Today we had a pie contest at work and of course Terri and I entered! I came in second and had to share my recipe with you just in time for the most important pie day of the year! Its my Grandma Kennedy's recipe and tweaked a few things. Enjoy.
Ingredients:
2 cups of graham cracker crumbs
6 tablespoons of melted unsalted butter
1/4 cup of granulated sugar
zest from half of a lime
3 egg yolks
1 14oz can of condensed milk
1/2 cup of Nellie and Joe's key lime juice
Pre-heat oven to 350 degrees. In a bowl combine the graham cracker crumbs, melted butter, sugar and lime zest. Put the mixed ingredients into a pie tin and with the back of a spoon evenly distribute the graham cracker crust gently pushing the crust together to stick. Bake in the oven for 10 minutes at 350 or until crust is a little more golden. Once the crust is down allow to come to room temperature.
In a large mixing bowl beat the egg yolks together until smooth. Once the eggs are smooth, gradually add in the can of condensed milk followed by the key lime juice. Add the key lime mixture to the room temperature crust and place back into the oven for 15 minutes. Allow the pie to come to room temperature and then place in the refrigerator to cool. Serve with whipped cream on top.
