And the Winner Is....

The Killer White Chocolate Cream Cheese Tart

As Erika previously mentioned we had a pie contest at the office today.... and I won! This is a recipe my mom makes all the time. It's originally from Taste of Home, but I've modified the toppings slightly to make it even easier. You can really use any fruits you want. They suggest pineapple and kiwi and mandarin oranges, but I don't like to use canned fruit, so I use fresh berries.

INGREDIENTS
3/4 cup butter - softened
1/2 cup powdered sugar
1 1/2 cups flour
10 ounces white chocolate
1/4 cup heavy cream
8 ounces cream cheese - softened
Assorted berries or fruit for the topping
2 tablespoons lemon curd or apricot jam


Step One:
THE CRUST
Mix the butter and the powdered sugar together first with an electric mixer. Gradually add in the flour until everything is mixed together.
Press into the bottom of an 11" tart pan (ungreased) with removable bottom.
Bake at 325 for 20 minutes, until lightly browned.
Remove from the oven, and cool on a wire rack or the stove top.

Step Two:
THE FILLING
While the crust is cooking you need to melt the chocolate. I use a double broiler to melt it. If you don't have this, you can microwave it in 30 second incraments, stirring until the chocolate is completely melted and smooth.
Cool the chocolate.
Start the 2nd part when you pull the crust out of the oven:
Mix the chocolate with the heavy cream first, and then add the cream cheese. You must use an electric mixer for this, otherwise it won't be creamy enough.
Pour the filling onto the crust and spread evenly.
Refrigerate for at least 30 minutes.

Step Three:
THE TOPPING
Mix 2 tbs lemon curd (or apricot jam) with a tablespoon of water. Microwave for 20 seconds. Stir together and then let cool
Arrange the fruit on the crust as neatly as you can. This is what makes this dessert look so neat.
Use a pastry brush to brush the lemon curd over the fruit to glaze.
Refrigerate for 1 hour before serving.
