White Fish with Mango Salsa

Fresh and healthy is what I am going for with my meals this week, so I thought I would cook up some fish with mango salsa. So easy and very satisfying as you get a combination of sweet and savory. It takes just a few ingredients to make this meal and once you take your first bite you will feel like you are on a tropical vacation! Serve with steamed brown rice and a side of avocado.

Ingredients:
olive oil
1 lb of fresh Talipia fish (you can use any fish, but I prefer this fish since it isn't very fishy)
1/2 of a red onion diced
3 cloves of garlic minced
1 jalapeno diced
1 teaspoon of zest from a lime
1 lime
1 mango diced
cilantro chopped

For the fish:
In a piece of tin foil that is about 1 1/2 feet long (you may also use parchment paper) drizzle some olive oil and rub it around with you hand. Place the fish in the middle of the tin foil. On top of the fish sprinkle a little amount of each: onion, garlic, jalapeno. Take the zest from the lime and distribute that on all of the fish evenly. Now you need to fold the tin foil as if you are creating an envelope around the fish. I would take the short ends (lets pretend we are in school and this would be folding the tin foil hamburger style from top to bottom) and bring them together and lightly fold the ends over the other sealing it. Then I would start from the left side of the package and the the open ends and roll the tin foil until you almost touch the fish. Do the same for the right side. You want there to be plenty of room for the fish to breathe and steam in there, so make sure it is a pretty loose envelope. Place the tin foil envelope on a cookie sheet and bake in the over at 400 degrees for about 15-20 minutes. When the fish is done it will be solid white and falling apart.

Mango Salsa:
In a bowl combine the chopped mango, remaining onion, garlic, jalapeno and add in the cilantro. With the lime, slice in half and squeeze the juice from both halves into the bowl. Stir and let sit while you are cooking the rest of your meal.

Serve the fish with the mango salsa on top and enjoy!
